GREEN MANGO SALAD



A small seedling Mango that is producing fruit already.

Green Mangoes are also used as a delicious vegetable. So is Green Paw Paw (Papaya to Americans)

Combine
  • 2-3 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon palm or raw sugar 

 and add to grated mango or paw and other shredded or chopped vegetables.


Green Banana Cakes

Oven baked green banana savoury cake
• Boil and mash sufficient green bananas (or plantains) to replace the meat in a traditional rissole recipe.

• Blend with plain flour (wholemeal, half wholemeal is preferred), an egg if you like, crushed nuts, finely chopped vegetables, seasonings (cumin works well) and herbs of your choice until you have a mix that can be shaped into small rissoles.

• Fry in a frypan using coconut or olive oil or bake in the oven to avoid oils. These little savoury cakes go well as a nibble with pumpkin soup or served with a savoury sauce.

BUNYA NUT CAKE

Our local Seed Savers group provided this recipe to utilise Bunya Nuts from the Bunya Pine (Araucaria bidwillii - Wikipedia).

As you can see these are very large trees and too big for our acre of food forest. The tree above is growing in Sintra, Portugal, and is around 150 years old. I imagine that when the tree starts dropping its large cones, the drop zone is fenced off.
